“Mock”-cos (Mock Tacos)


1lb Extra Lean Ground Beef
1 pk Low Sodium Taco Seasoning
1 jalapeño, seeded and diced.
1 small Onion, diced
1 Green Pepper, diced.
1 Medium Tomato, diced.
1 head of crispy Romaine Lettuce.
½ c grated Low Fat Grated Sharp Cheddar Cheese. (optional)
95% Avocado Guacamole.
Fat Free Greek Yogurt (or Fat Free Sour Cream)
Salsa
1.       Brown ground beef on medium heat in a large pan until no longer pink.
2.       Drain fat. Rinse the beef under water in a strainer (to rid excess fat). Pat dry with paper towels.
3.       Transfer back into pan on low heat. Add taco seasoning, diced jalepeno and 1 cup of water. Simmer until sauce reduces.
4.       Separate lettuce leaves, rinse, and pat dry.
5.       Spoon taco flavored beef onto lettuce leaves, top  with desired veggies  (green pepper, tomato, onion). Top also with salsa, yogurt (or sour cream), guacamole and cheese. Wrap and enjoy!
6.       For a lower fat option use extra lean ground turkey and omit the cheese!
